Recipe Sunday: Veggie Egg White Muffins

Veggie Egg White Muffins ~ Makes 5 Muffins

  • 5 egg whites
  • garlic powder (to taste)
  • cayenne pepper (to taste)
  • pepper (to taste)
  • pinch of salt
  • choice of mixed veggies

Method:

Preheat oven to 350*. Spray muffin pan and set aside. In a medium size bowl combine egg whites and seasonings and whisk well. Line bottom of muffin tin with egg white mixture, scoop in veggies, then cover veggies with more egg white mixture. Bake for 17 – 20 minutes or until edges are a light brown.

Recipe tweaked from Why I Run. I used his recipe over Memorial Day Weekend and they were yummy too. He has tons of great recipes on his site that include video tutorial as well.
