Recipe Sunday: Breakfast Bake/Casserole

My friend who is a trainer at work gave me a few breakfast ideas to help me change up my eating and to make sure I’m making healthier choices.  One of her suggestions was a breakfast bake. Thanks Allison!

Baked egg casserole get some Jimmy Dean’s Natural Sausage brown half of that, once it is close to browned add in whatever veggies you would like i.e. bell peppers, spinach, tomatoes, mushrooms, asparagus, etc let that cook down for just a few minutes then transfer to a small casserole dish. Beat some eggs (5-6) together add some salt and pepper and pour over the veggies and sausage and bake in the over 350 for about 15 minutes, or until the eggs are cooked. Then just cut up into pieces and enjoy! You can have this with some fruit.

Here is my version, it turned out Ymmy!!!

I just started cutting up the following: No real measurements, used a small baking dish.
Spinach (hand full of baby spinach)
Turkey Sausage (2 patties)
Onions (about 1/4 cup)
Green Peppers (about 1/4 cup)
Celery (1 stick)
Tomato (about 1/4 cup)
Shredded carrots (hand full)
5-6 Eggs
Seasonings used: Pepper, Onion Powder and Garlic Powder (season to taste)
Sprinkle with cheddar cheese

Once all veggies are chopped, place the sausage in a pan to brown.  When sausage are browned then add veggies and seasonings.  Let them simmer down a bit. While veggies are simmering beat your eggs together. Pre heat your oven to 350.  Place veggies and meat in baking pan and pour eggs over them.  Bake for 20-30 min or until eggs are completely cooked.
