Recipe Sunday: Mac and Cheese

So once again more cravings.  Since the beginning of my pregnancy I have been craving my NaNa’s Mac and Cheese.  Since I couldn’t get her to make it for me I have been trying to get her recipe down, no SUCCESS with that.  But Oh Joy she is with us for a week and today is the day I get to satisfy this craving.  So to be honest I’m sure we could make this a bit healthier so here we go.

NaNa’s recipe includes:

  • Bag of sharp cheddar shredded cheese
  • 2 blocks of sharp cheddar cheese
  • 1 stick butter
  • 1 table spoon sugar
  • 1 table spoon flour
  • 1 cup of milk
  • 1 can condensed milk
  • 2 eggs
  • Sour cream
  • Pepper, mustard powered, salt to taste

Healthy Remix: Mac and Cheese Lite

Makes: 4 servings

  • Nonstick cooking spray
  • Salt
  • 4 ounces whole wheat macaroni
  • 1/2 cup onion-garlic puree (see “Rocco’s Secret Weapon,” below)
  • 1/2 teaspoon dry mustard
  • Pinch cayenne pepper
  • 1 cup shredded 50 percent reduced-fat cheddar
  • 1/3 cup nonfat Greek yogurt
  • 1/4 cup whole wheat panko bread crumbs
  • 1/4 cup grated Parmesan
