Recipe Sunday: Healthy No Bake Snacks

I’m on a mission to do better with meal planning and meal prep for the week.  Today I’m looking for some easy no bake snacks for the family to enjoy.  I know I will add the No Bake Energy Bites to the list, they were a hit in my house. (and at work :))

Pinterest is a great starting point.  Here are a few that I will try out.

1. Frosty No-Bake Granola Bars

  • 2 large overripe bananas
  • 1 cup oats
  • 1/2 cup crunchy cereal
  • 2 tbsp pure maple syrup(or any other sweetener you use)
  • 2 tbsp peanut butter or other nut or seed butter
  • 2 tbsp semi-sweet chocolate chips
  • 2 tbsp dried cranberries or other fruit
  • 2 – 4 tsp cocoa powder

2. No-Bake Peanut Butter Pretzel Chocolate Chip Granola Bars

1/4 cup brown sugar
1/4 cup honey
1/4 cup creamy peanut butter
1 teaspoon vanilla extract
2 cups quick oats
1/2 cup crispy rice cereal
3/4 cup chopped pretzels
1/4 cup mini chocolate chips

3. DIY Power Bars

1 tablespoon vegetable oil
1 1/4 cups rolled oats
1 1/4 cups chopped toasted walnuts
1/2 cup oat bran
1 1/2 cups puffed cereal you like, pounded into smallish bits (I used Barbara’s Peanut Butter Puffins and Shredded wheat, both with success)
1 cup dried cranberries, coarsely chopped
3 pieces of dried crystallized ginger, finely chopped
1 cup brown rice syrup
1 teaspoon pure vanilla extract
1/2 teaspoon salt

4. Popped Quinoa Trail Mix

  • 1 teaspoon Chia seeds plus 3 Tablespoons filtered water
  • 2 Tablespoons raw honey, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 Tablespoon coconut oil, melted
  • 1/2 cup quinoa, popped
  • 1 cup sliced almonds, raw and unsalted
  • 1 cup macadamia nuts, raw and unsalted
  • 1 cup pecans, raw and unsalted
  • 1 cup pepitas, raw and unsalted
  • 1 cup dried cranberries, unsweetened
  • 1/2 cup sesame seeds
  • 1 cup large, unsweetened coconut flakes
